Note for cooks without air fryer
You can do vegetable chips in the oven. I recently bought an air fryer though and I will never look back. Makes many things much quicker, needs less oil, makes many things crunchier while keeping it still moist inside, is really easy to clean. Take a look at some YouTube videos. The magic is real. I can only provide temperatures and cooking/frying times from what I found out using my air dryer. Please look around online for oven temperatures and timings – there are many recipes out there. Hope you still find some inspiration on this page.

  1. Prepare your vegetables
    • Kale
      • The dark leaves work best. The inner light green leaves will stay moist – or you can fry them separately / use them for something else.
      • Remove the big stem of each leaf.
      • Wash the leaves as often times they can be sandy/dirty – especially the outer layers.
      • Try to dry as good as possible for more/faster crispness. I even used a paper towel to get rid of the moisture after washing.
      • Rip into chips-sized pieces. Can be 2-3x the size of regular chips as the leaves shrink notably during frying.
    • Sweet potato
      • Wash the potato – if you are not peeling the potato.
      • I am lazy so I naturally just washed it and proceeded without peeling.
      • Cut in very thin and even slices.
      • Ideally use a slicer that produces very similar slices.
  2. Put vegetables in a bowl and add seasoning
    • I love the peanut butter chili seasoning on kale. Just mixing all ingredients in a small bowl, pour over kale (in big bowl) and mix by hand until all leaves are covered evenly.
    • I often also just use 1 tbsp of olive oil and salt/pepper instead of sophisticated seasoning.
  3. Pre-heat air fryer from 130 to 150 °C
    • I used less heat for vegetables that dry faster (e.g. kale)
    • and higher heat for denser vegetables (e.g. sweet potato)
    • still much lower than what you would use for processed french fries – as 150+ °C will too quickly burn your vegetables
  4. One batch takes 10 to 30 minutes (air fryer)
    • Depending on vegetable: kale dries/fries very quickly, sweet potato not so much.
    • I just stand by the machine and open it up every 5-8 minutes to give the vegetables a shake (especially sweet potato slices need to be mixed up regularly).
    • While shaking vegetables you can check their dryness.
    • I tried the oven too but switched mid-cooking to the air fryer (oven was not even half done while another batch in the air fryer was done perfectly).
